Amish soup brings family together

From the LivingFirst Blog:  We are running circles around each other.  Parents zip off to work, kids scamper out the door for school, and in the evening we do not even sit down at the table together for a meal.  Eating on the run or in front of the TV is not unusual.

One hearty meal that will bring a family together is soup.  Think about it. You put a pot of yummy stew or chowder as the centerpiece of your table, break out the heavy-duty ceramic bowls and spoons and sit down together — as a family.

It is tough to eat soup on the run.  We are forced to sit down and eat at a slow pace, one spoonful at a time.  But the real treat of this meal is the conversation that will pop up.

Check out this authentic Amish Beefy Veggie Soup.  It will surely warm your belly and your heart.

Amish Beefy Veggie Soup

  • 1 soup bone
  • 2 lbs. stewing beef
  • 2 qts. water
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup tomatoes
  • 2 tsp. salt
  • black pepper
  • grated parmesan cheese

Into 2 qts. of water put soup bone and beef and boil for 2 hours. For a hearty, substantial soup, cut up the meat in small pieces and return to the broth. Add tomatoes, onions and celery. Also add other available vegetables, such as diced potatoes, carrots, turnip, string beans, corn, peas, cabbage or chopped peppers. Boil until all vegetables are tender.  Sprinkle grated parmesan cheese on top of soup.  Serve some crusty bread or rolls and dip them into this scrumptious meal.  Serve and enjoy!
