No-Mayo Potato Salad

Spring is here and soon there will be picnics and cookouts that will require no-fuss side dishes that will be able to hold up outdoors.  Potato salad is a staple, but sometimes mayo doesn’t always maintain its taste or consistency.  Not to mention, some people just don’t like mayonaise.

Here’s a quick recipe from AllRecipes.com that cuts out the mayo and adds Mediterranean flavors.

You will need:

2 lbs potatoes

1 minced green bell pepper

1 cucumber that has been sliced and quartered

1/2 cub sliced red onion (you can add more or less to fit your taste)

8 oz crumbled feta cheese

Juice of one lemon

1/2 cub Italian salad dressing

Salt and pepper to taste

Instructions:

  1. Bring a large pot of salted water to a boil. Add potatoes and cook for 15 minutes.
  2. Drain, cool and chop.
  3. In a large bowl, combine the potatoes, green peppers, cucumbers, red onion and cheese.
  4. Whisk together the lemon juice, salad dressing, salt and pepper. Pour over salad and toss to coat. Serve with pita bread wedges if desired.
