Spring is here and soon there will be picnics and cookouts that will require no-fuss side dishes that will be able to hold up outdoors. Potato salad is a staple, but sometimes mayo doesn’t always maintain its taste or consistency. Not to mention, some people just don’t like mayonaise.
Here’s a quick recipe from AllRecipes.com that cuts out the mayo and adds Mediterranean flavors.
You will need:
2 lbs potatoes
1 minced green bell pepper
1 cucumber that has been sliced and quartered
1/2 cub sliced red onion (you can add more or less to fit your taste)
8 oz crumbled feta cheese
Juice of one lemon
1/2 cub Italian salad dressing
Salt and pepper to taste
- Bring a large pot of salted water to a boil. Add potatoes and cook for 15 minutes.
- Drain, cool and chop.
- In a large bowl, combine the potatoes, green peppers, cucumbers, red onion and cheese.
- Whisk together the lemon juice, salad dressing, salt and pepper. Pour over salad and toss to coat. Serve with pita bread wedges if desired.
