Chickpea, Cherry Tomato, and Feta Salad

You Will Need:

  • 1/4 cup canned chickpeas
  • 1/2 cup quartered cherry tomatoes
  • 1/4 cup crumbled feta
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons olive oil
  • 1 teaspoon dried oregano
  • 1/8 teaspoon salt
  • Ground pepper

What to Do:

  • Rinse and drain chickpeas
  • Combine all ingredients in a bowl — add enough pepper to taste

Note:

Add cucumbers to make the salad feel more filling
